The most likely theory is that Mirabel comes from two Occitan elements: mira which means "look" and bèl/bèu which means "[that which is] beautiful". Thus, Mirabel could be literally translated as “look at [what is] beautiful”. Numerous panoramas of the hillsides, orchards and lakes are visible on hikes and even from the road!
